Rome is one of the world's great eating cities, but finding the right trattoria among tourist traps takes insider knowledge. Here's where locals actually eat.

Rome rewards the curious eater. The city's best meals are rarely found on the main piazzas — they hide on side streets in Trastevere, Testaccio, and Prati, where tablecloths are paper and the wine comes in carafes.

Start in Testaccio, Rome's original working-class food neighborhood. This is where the legendary offal dishes were born — coda alla vaccinara, trippa alla romana, and rigatoni con pajata. Trattoria Da Remo has served Roman-style pizza al taglio here since 1969, and the line at noon tells you everything.

For cacio e pepe done right, cross into Trastevere. The dish is deceptively simple — pasta, Pecorino Romano, and black pepper — but the ratio and technique separate excellent from ordinary. Look for trattorias that make their pasta in-house; the texture makes a genuine difference.

Avoid the restaurants directly bordering tourist attractions like the Trevi Fountain and Spanish Steps. The markup is real and the quality usually isn't. Instead, walk two blocks in any direction and you'll find the same Roman classics at half the price with twice the atmosphere.

The aperitivo hour (6–8pm) is worth building your evening around. Order a Negroni or a glass of Frascati, eat the free cicchetti, and watch Roman life unfold before you sit down to your actual dinner — which rarely starts before 8:30pm anyway.
